La Ruta del Xató o Xatonada is a gastronomic tour that take place in the counties of Alt Penedès, Baix Panadès and Garraf, situated between Barcelona and Tarragona. Besides being the ​​most production area of wine and cava (champagne)  of Catalonia, these three regions are known for their star dish, The "xató".

Xató is a traditional dish of Catalan cuisine originating in the Alt Penedès, Baix Panadès and Garraf, places where we have the first references of the xató in the nineteenth century. Despite the existence of different versions as to its origin, it is believed that the name of this dish comes from the "aixetonament" of the barrel , procedure consisting in puting a tap on barrel to taste the first wines of the harvest.

The main ingredients of xató are:escarole, salted fish, which can be tuna, cod, anchovies , and its characteristic sauce. This last ingredient varies depending on the town but usually its  base is made with almonds, hazelnuts, garlic, peppers, bread, vinegar, olive oil and salt.

A total of 85 restaurants are participating in Xató route,  gastronomic feast developed around of this dish and it is held every year during the month of November. This time of year the towns and cities in the area organize activities such as popular " xatonadas", competitions and fairs.
